Starter : Courgette carpaccio with Argan oil, confit tomatoes & parmesan ice cream.
Main course : Round courgette stuffed with fresh sheep cheese, pine kernels & courgettes.
Local pagre fish :
Starter : just flashed with spices, apricots salad with flat beans, rosemary & almonds.
Main course : Filet steamed with marinated red peppers, spinach, pine kernels crumble, smoked potatoe soup.
The "Racan" poultry:
Starter : The leg roasted with garlic & rosemary, local mushrooms salad, with little cherry tomatoes & truffle.
Main course : Poached poultry suprême with coconut, wheat with kale cabbage, cherries & cranberries.
Cheese & desserts :
- Sheep cheese tiny sliced, poached pear with Espelette pepper and dried cheries.
- Cherries caramalized & flambé with kirsh likor, the pistachio in multi way prepared.
