Starter : Soked & roasted cep, with "Cime di Rappa" puree, shallots and wallnuts sauce.
Main course : Cep mushrooms and chanterelle risotto with poutargue.
The Scallops and octopus:
Starter : Scallop & octopus carpaccio with nuts, Reinette apple with celeri and cumbawa lemon sorbet.
Main course : Scallop and octopus poached in the smoked eel and sea weed, potatoes and salsify.
The pigeon from Bresse:
Starter : Roasted pigeon filet with sliced fresh oranges, pumpkin soup with chestnuts.
Main course : Pigeon and foie gras roasted, red wine and chocolate sauce, celeriac & coffee puree, roasted quince.
Cheese & desserts :
- Sheep cheese tiny sliced, poached pear with Espelette pepper and dried cheries.
- Poached pear, choco mouss with red pepper, ginger sorbet .
- The apple with safran, dates and apricots, cider jelly, roasted apple sorbet, crispy milk chocolate.
