The green & white aspergus from the Provence:
Starter : Aspergus with see weed crisp, fresh goat cheese from Tourrettes with sea weed caviar and lemon dressing.
Main course : Green & white aspergus risotto infused with lemongrass.
The wild seabass:
Starter : Raw sea bass prepared as a tartar, seaweed spaguetti & sweet red pepper with smoked fish stew.
Main course : Sea bass braised, artichokes cooked & sliced uncooked and as a soup with bellota ham sauce and chips.
The Angus beef : (USA and Australia)
Starter : Rumsteak carpaccio, soja and sesame oil dressing served with aspergus, turnips and radish salad.
Main course : Piece of australian beef smoked & grilled, potatoes and safran, winter tomato and cooked egg sauce.
Cheese & desserts :
- Sheep cheese tiny sliced, poached pear with Espelette pepper.
