Starter : Artichoke & truffle puree, yellow egg and 36 month old Bellota ham.
Main course : The big artichokes roasted served with broken eggs and truffle.
The cod fish :
Starter :Tiny slicedand marinated with lemon and violet flowers from Tourrettes, pear and kiwi.
Main course : Back of the cod fish confit with olive oil, beetroot and spinach, celeri & green aplle sauce.
Starter : Stuffed mushrooms with beef tail, foie gras and confit shallots, ham & hay emulsion.
Main course : Heart of Rumsteak lightly smoked with hay then grilled, turnips & honey with grapefruit, endives .
