Starter : Chanterelles mushrooms with clams and Saké.
Main course : Cep mushrooms and chanterelle risotto with poutargue.
Starter : Pan fried squeedwith lemon, fennel salad with red pepper and fresh wallnuts, lightly fried red pepper with soft egg sauce with squeed ink.
Main course : Squeed kebab cooked on the plancha with espelette pepper, smoked celeriac, pickel's of celeri, pumpkin and green apple.
The french veal:
Starter : Chicks veal salad with lobster and fresh grenada, orange dressing and onion mouss.
Main course : Veal filet roasted with thyme and lemon, carrots puree and glazed, veal gravy and ginger bread.
Cheese & desserts :
- Sheep cheese tiny sliced, poached pear with Espelette pepper and dried cheries.
- Crème brûlée with marinated blackberries in red wine and cinamon .
- Chocolate parfait, crispy puff pastry, blueberries, yoghurt and crispy biscuit.
