Starter : Melon & water melon salad served with hazelnuts, ham mouss & white porto jelly.
Main course : Melon & fresh almonds risotto with 36 month old Bellota ham.
The sea bass :
Starter : Sea bass & sea snails as a tartar, smoked fish sauce & freezed yuzu.
Main course : Sea bass with a crispy side of aklibds, abricots salad & sea weed and rosemary sauce.
The black angus beed from Australia :
Starter : Marinated with black curry, ricotta cheese with confit girolle mushrooms & cep, onions pickels.
Main course : Entrecôte sauted, confit tomatoes & grilled veges, egg sauce with basil.
Cheese & desserts :
- Sheep cheese tiny sliced, poached pear with Espelette pepper and dried cheries.
- Poached peach with bergamote tea, lime and basil sorbet hazelnuts biscuit.
