Starter : Poached aspergus with langoustines and truffle, fresh homemade pasta.
Main course : Aspergus, fresh onions & sucrine salad sauted & served with mollet egg.
Ombrine fish :
Starter : Poached ballotine of ombrine with dill, green beans salad confit lemon & shells.
Main course : Ombrine fillet , fennel puree wirh honey and Granny Smith apple, aniseed emulsion.
Starter : Rolled sirloin raw "black angus", radish salad & hazelnuts, garlic puree & beans.
Main course : Slice in the carré " Simenthal", green peas puree with wasabi, chips, beef gravy.
Cheese & desserts :
